Recipe: Madeiran Fish Stew or Caldeirada à Madeirense

Madeira, an island lost in the Atlantic, is surrounded by the Ocean.  Hence, the wonders of the ocean constitute a large part of the diet of Madeira’s inhabitants.

Here is a traditional Madeiran Fish Soup or Stew.

Ingredients:

  • 4 to 5kg of fish (snapper, rockfish, redfish, any fish really… )
  • 3 large onions
  • 1.5kg of tomatoes
  • 1.5kg of potatoes
  • 5 cloves of garlic
  • Bay leaves
  • Parsley
  • 3dl of olive oil (only use top quality olive oil)
  • Salt

Preparation:

  • Slice the onions.
  • Peel the skin of the tomatoes and remove the seeds. Then cut in pieces.
  • Chop up the garlic.
  • Slice the potatoes.
  • Add all above ingredients in a stew pot (clay pot, crock-pot, cast iron cookware).
  • Cut the fish in large chunks and add it.
  • Sprinkle parsley, salt, and bay leaves according to your taste.
  • Add olive oil and cover the pot
  • Cook slowly over low heat without adding water. Always keep the pot closed.

Caldeirada a Madeirense Portugal Madeira Fish Stew Recipe

When ready to serve, place pieces of homemade bread in the bottom of the plate and then pour the stew over it.  Alternatively, you can also add chunks of bread to the soup before serving.  If you choose this option, then do not add bread in the individual soup dishes.

Serve with a nice glass of Madeiran Table Wine.
